The Harima region, which includes Himeji, is said to be the birthplace of Japanese sake, because a passage in the "Harima Fudoki," a document compiled about 1,300 years ago in the Nara Period, names Harima as the place where the brewing method can be found. Furthermore, with Yamada Nishiki rice (a short grain rice used in sake brewing) harvested from the Harima plain accounting for 80% of the nation's production, Himeji is blessed with delicious water and sake rice, for the perfect environment in which to brew delicious sake. There are eight sake breweries in Himeji City, all brewing unique sakes.
